Mirco Scacchetti preserves this secret even now. A secret which Mirco repeats to his maîtres chocolatiers every morning, when he reaches his laboratory before dawn.

A tradition, handed down from his dad, Tonino Scacchetti, who has supported his son in this adventure, later on became something unique and special.

And so, among the first lights of the day created by the wise hands of experienced bakers, came this delicious Cioccolami chocolate salami.
